Why

The cut of the oat matters more than the amount. Steel-cut and rolled oats digest slowly; instant oats are pre-cooked and behave much faster.

Oatmeal is usually recommended and usually eaten in a form that undercuts the recommendation. The beta-glucan fibre in oats genuinely slows glucose absorption — that is a real, measured effect. But instant oats have been cooked, dried and cut fine, which does much of the digestive work in advance. Same grain, different speed. Flavoured instant packets then add sugar on top.
